While in Seattle last week, we spent the day exploring Pike Place Market. If you haven’t been, this is definitely a must-visit destination if love fresh, whole foods. You can find a little bit of everything there!

While exploring the market, we stumbled upon many cool things that were new to us. One of those things was rainbow carrots.

Being completely honest, the Reid family does not like carrots. There, I said it. We’ll tolerate them cooked in a stew or shredded in a slaw, but we avoid them cooked by themselves or raw (even dipped in the South’s favorite condiment, Ranch dressing).
However, we thought we should try the rainbow carrots. They had really unique colors and we wanted to find out if they tasted different than traditional orange carrots.
Cooking: We didn’t have the means to peel the carrots, so I roughly julienned them and and added them to a skillet with a couple drops of olive oil, a dash of salt, and a couple splashes of water. Viola! They were steamed in about 8 minutes.

The first one I tasted was purple … and it tasted like dirt! I looked around the table to see if anyone else was ready to shovel their rainbow carrots in the trash. Lo and behold — the rest of the family was eating them!
Marshall ate all of the carrots on his plate before touching the rest of his meal. Dan commented that the carrots were, “Yummy.” I decided to try another bite. It was okay. Another bite. Getting better…. Before I knew it, my carrots were gone and I was offering to finish Jordan’s!
I don’t know if I got one bad piece or if I had already made my mind up to not like the rainbow carrots before I tried them, but I’m glad that I gave it another try (and that my family really liked their’s).
We will certainly add rainbow carrots to our repertoire if we encounter them again — especially since each color has certain health benefits and this type of carrot has a longer shelf life than some other produce.
