Salsa is one of our favorite condiments. Not only is it healthy, but it requires minimal ingredients, minimal work, and you can eat it on anything.
Last night we made a tasty Golden Pepper Salsa that we wound up using again this morning. Try it out!
1 medium yellow pepper
1 medium orange pepper
1 medium green apple
1 bunch of cilantro
Salt and pepper to taste
Seed and dice the peppers. Core and dice the apple. Chop the cilantro. Add all ingredients together, toss well with the lemon juice, and add salt and pepper to taste. Serve immediately or cover and chill for future use.
Last night we ate our golden pepper salsa on quesadillas. Then we turned around this morning and had it over eggs. Yum and double yum!
