Simple Ingredients Yield Delicious and Nutritious Dinner
A simple combination of spices and common ingredients (at least in our pantry and refrigerator) brought forth this delicious and hearty Indian Stew. It is vegetarian but we added a garnish of crispy bacon for those members of our family that require meat in every dinner dish. As with all of our recipes they are not hard and fast follows. You can modify any way you wish. If you don’t have sweet red bell peppers, don’t worry about it.
Ingredients
Cooked rice of your preference, enough for your family and leftovers
An onion, minced
Lots of fresh garlic, minced
Double dash of salt
Double dash of pepper
Double dash of curry
Double dash of ground ginger
About three cups of good quality tomato sauce
Three cans chickpeas (garbanzo beans) drained and rinsed
Couple of chopped sweet red peppers or mushrooms. Anything fresh you may have
Three splashes of lime juice
Garnish with crumbled bacon or fresh chopped scallions or cilantro or plain low fat yogurt
Directions
In a large deep skillet, saute onion and garlic with all the spices on low heat. When onion is tender add the rest of the ingredients. Cover and simmer for about 20 minutes. Stir often and taste once in a while to get it the way you want it. If it is too thick due to the tomato sauce you can add a bit of water to get it to the consistency you want. Serve over or next to your rice and garnish.

This was good. I like chickpeas but have never had them this way. You don’t really know that they are in there. This was warm and filling, I might have leftovers for breakfast!
